In my opinion, most jams are way too sweet. I wanted to make a jam that had a tart punch with an understated sweetness. This jam fits the bill perfectly using only 4 ingredients. The berries and lemon juice provide the perfect tart/sweet contrast, the chia seeds add thickness, and the honey adds the right amount of sweetness without using processed sugar.

I like to use this jam as a topping on pancakes, waffles, yogurt, or a slice of sourdough. I also use it for my Peanut Butter and Jelly Granola Bars and it adds a great tartness to Sourdough French Toast.

Ingredients
- frozen mixed berries in (any combination of raspberry, blueberry, strawberry and blackberry)
- lemon juice
- chia seeds
- honey

Instructions

Step One: Pour frozen berry mixture into a 2 quart dutch oven, or other small pot. Place on the stovetop over medium heat. Allow the berries to begin to defrost and release juices, stirring occasionally.
Step Two: After about 3 minutes, add in chia seeds and lemon juice, continue to stir occasionally and allow the berries to cook down.
Step Three: Drop the heat to medium low and stir frequently making sure the scrap the bottoms and sides. Press any berries that are still whole.
Step Four: Remove the jam from heat and stir in the honey. Allow the jam to cool a bit before serving warm or allow it to cool completely and transfer to glass jars.

Use the jam use any way you would use normal jam/jelly. Its not overly sweet so if makes a great topping for yogurt and pancakes.
Top Tip
Stir frequently once the mixture starts to bubble to avoid burning.

2 tablespoon chia seeds
juice of 1 medium lemon
1 tablespoon honey
