Simple, no bake granola bars have become my go to freezer snack. This bar is sweetened with maple syrup and uses a homemade Berry Chia Seed Jam. The berry layer has the perfect tartness to pair with the chewy peanut butter oat layer.

I make this bar in large batches and keep them in the freezer for an easy snack. I’ve also made variations using cherry jam and strawberry jam. Any jam you have will work!

Ingredients

- oats
- peanut butter

Instructions

Step One: Place oats in a food processor and blend on high speed until it is a blend of oat flour and large pieces of oats. Start with about 20 seconds and pulse from there.

Step Two: Melt the coconut oil and peanut butter in a microwave safe bowl. Add the vanilla, chia seed, flax seed, salt and maple syrup.

Step Three: Stir in the ground oats.

Step Four: Line a pan with parchment paper. Pour ¾ of the oat mixture onto the pan and firmly press into a thin layer: about ½ inch thick. Spread the berry jam over the top.

Step Five: Use the remaining ¼ of the oat mixture and crumble it across the top of the berry layer. Gently press it into the berry mixture.

Step Six: Place the bars in the fridge to set for an hour or in the freezer for about 15 minutes. Chop into bars and squares. Choose any size that works for you. I usually create about 12 rectangles. Store the bars in the fridge or freezer. Room temperature bars tend to fall apart.
Hint:
Give yourself the gift of prep
Freeze: Double batch and keep these bars in the freezer. I’ll sometimes make two different flavors of bar (using two different jams). Throw in a lunch box or let it sit out for a few minutes when you need a quick snack. I also enjoy them straight from the freezer.
Berry Jam: Make Berry Chia Jam and use it any way you would use normal jam/jelly. Its not overly sweet so if makes a great topping for yogurt and pancakes.
Yogurt Topping: Crumble the bar over the top of yogurt for a fruity oat topping. It won’t be crunchy like normal granola, but still super flavorful.
Breakfast, snack and dessert: These bars contain no processed sugar (check your peanut butter) and work as part of a breakfast, a snack or a dessert.
Substitutions
- Peanut Butter – trade for almond butter or another nut butter.
- Jam – Use any jam flavor you prefer.
Equipment
Food processor- Straight oats don’t stick together as well, so using a food processor to create an oat flour/oat mixture creates a better texture for the bar and helps it stay together.
Storage
Store in the fridge for 3-4 days or keep in the freezer for 3 months.
Top Tip
Use another sheet of parchment paper to press the oat layer. This will allow you to get an even layer and apply plenty of pressure without the oats sticking to the paper or your hands. Use this same sheet of parchment paper when pressing down the top crumble layer.
Bonus: Use your largest measuring cup when smoothing the oat layer. This prevents indentions from your fingers. You could also use another baking sheet on top of the parchment paper to create an even amount of pressure.
