Any time I have leftover sourdough that’s starting to go stale I use it to make french toast. The thick slices soak up all of the flavor in the custard mixture and cook up to a perfect golden brown.

Topping the french toast is half the fun! Add berries or Baked Apples and Pears and Homemade Maple Whipped Cream for extra pizazz.

Ingredients

- sourdough
- eggs
- butter
- brown sugar
- salt
- cinnamon
- heavy cream
- milk
- vanilla

Instructions

Step One: Combine the eggs, milk, cream, vanilla, brown sugar, salt and cinnamon in a large shallow bowl. Beat the eggs to fully combine into the mixture.

Step 2: Place slices of sourdough into the custard mixture, allowing them to soak for about 2 minutes, then flip and soak the other side for 2 minutes.

Step Three: While the sourdough is sitting in the custard mixture heat a cast iron over medium high heat and melt the butter.

Step Four: Cook the french toast on the cast iron for about 2 minutes per side or until golden brown. Adjust the heat on the cast iron as needed. While the french toast cooks, place another set of toast in the custard mixture to soak.
Step Five: Set aside the cooked french toast, add more butter to the cast iron as needed and finish soaking and cooking the rest of the sourdough slices. Top with maple syrup, Maple Whipped Cream, berries or Baked Apples and serve.
Hint: Don’t over soak the french toast or the bread with fall apart as you transfer it to the pan.
Give yourself the gift of prep!
In this section I will give you ways to freeze, re-purpose and/or use some of your ingredients for another meal. Save yourself some time and effort next time you’re in the kitchen!
Make ahead of time- You can slice all of the bread and prep the custard mixture the night before and keep the custard in the fridge. In the morning all you have to do in soak and cook.
Leftover bread- this recipe utilizes leftover stale sourdough bread, so perfect for minimizing waste in your kitchen. I usually make this the same week I make sourdough grilled cheese.
Equipment
Cast Iron Pan- I prefer to use a cast iron pan when making french toast because it retains heat well and creates a beautiful golden crust.
Top Tip
Cast iron pans are great at retaining heat and a well seasoned cast iron is pretty non stick, but because they retain heat so well make sure you adjust the heat as needed. most likely you’ll have to drop the heat to medium after the first few slices so the bread continues to get golden brown and not burnt.
