Instructions

Step One: Peel and grate half of a large cucumber. Place grated cucumber in a clean dish towel and squeeze out any excess liquid. You should be left with a ball of grated cucumber.

Step Two: Mince two cloves of garlic and juice a lemon.

Step Three: Mix all of the ingredients in a bowl and serve immediately or refrigerate for later.
Hint: Grate the cucumber straight onto a tea towel. This is super easy if you are using a box grater.
Give yourself the gift of prep!
In this section I will give you ways to freeze, re-purpose and/or use some of your ingredients for another meal. Save yourself some time and effort next time you’re in the kitchen!
- Make a dressing: Keep leftover tzatziki sauce and add red wine vinegar to create the creamy greek salad dressing used in my Greek Chicken Quinoa Salad.
Equipment
Box grater- I find the box grater to be the easiest tool to use when grating a cucumber. You can chose a fine grate or a normal grate depending on how chunky you want the cucumber to be in your tzatziki sauce.
Storage
Store in the fridge for 3 days.
Top Tip
To minimize dishes, grate the cucumber straight onto a tea towel, then squeeze. This is super easy if you are using a box grater.
