Simple Roasted Sweet Potatoes

Crispy on the outside, soft on the inside and just the right amount of sweet and salty flavor make these roasted sweet potatoes the perfect side dish. Pair them with chicken, pork, burgers, anything! This 6 ingredient dish might just become your new go to.

Sweet potatoes are loaded with nutrients and a healthy version of a crispy potato side since they are baked! Win win. Ingredients

  • sweet potato
  • salt
  • pepper
  • garlic powder
  • onion powder
  • avocado oil

Instructions

Step One: Preheat the oven to 425 degrees. Peel and dice 2 medium sweet potatoes, about 4 cups.

Step Two: Toss the sweet potatoes in avocado oil, garlic powder, onion powder, salt and pepper.

Step Three: Spread the potatoes on a sheet pan lined with parchment paper. Bake for 30 minutes, tossing the sweet potatoes halfway through.

Hint: Be sure to toss the sweet potatoes during the cooking process. This helps them get crispy on all sides.

Use leftovers for breakfast: If you have leftover roasted sweet potatoes, use them in my Mexican Sweet Potato Breakfast Bowl. The recipe calls for you to roast and dice a whole sweet potato. Just skip that part and use these potatoes instead!

Storage

Store leftovers in the fridge for 2-3 days. Reheat in the oven at 400 degrees for 5 minutes.

Top Tip

Use the biggest sheet pan you have to avoid the potatoes crowding each other. This ensures a crispy outside. Also, use parchment paper, NOT foil. The potatoes will stick to the foil.

  • ¼ teaspoon ground black pepper

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • 2 tablespoon avocado oil

Directions

  • Preheat the oven to 425 degrees. Peel and dice 2 medium sweet potatoes, about 4 cups.
  • Toss the sweet potatoes in avocado oil, garlic powder, onion powder, salt and pepper.
