Sausage and Veggie Breakfast Casserole

This sausage casserole is easy to throw together and feeds a crowd. It’s perfect for a weekend brunch or meal prepping for the week.

I love how versatile this casserole is. Switch up the veggies, use a spicy sausage or chorizo, or customize with different cheese and toppings. The possibilities are endless.

Ingredients

  • eggs
  • cheese
  • milk
  • breakfast sausage
  • bell pepper
  • onion
  • potato
  • spinach
  • salt
  • pepper

Instructions

Step One: Preheat the oven to 425 degrees. Brown the sausage in a heavy bottom skillet.

Step Two: Add frozen bell pepper, onion, potato and spinach to the sausage. Cook for 3 minutes, breaking apart the spinach.

Step Three: Add eggs, milk, salt and pepper to a bowl. Use a fork to scramble the eggs.

Step Four: Add sausage and veggie mixture to a 9×12 glass baking dish. Top with the egg mixture.

Step Five: Top with cheese and bake uncovered at 425 degrees for 30 minutes. Serve topped with pico de gallo, avocado, salsa or hot sauce.

Hint: If you use an oven safe skillet, such as cast iron, you can add the egg mixture straight to to the skillet, top with cheese and bake, making this a one skillet meal.

Give yourself the gift of prep!

Use frozen produce: I use frozen onions, bell peppers, onion and potatoes for this dish. This saves top chopping and I can keep the veggies on hand, meaning I always have what I need for a last minute breakfast.

Prep ahead of time: The night before, cook the sausage and veggies and place in a casserole dish. Cover and keep the dish in the fridge. In the morning add the egg mixture and cheese, then bake.

Freeze leftovers: Cut leftover casserole into individual servings. Place in a freezer bag or vacuum seal bag and store in the freezer. Place in the fridge overnight to defrost.

Variations

  • Spicy- use spicy breakfast sausage and pepper jack cheese.
  • Veggies- swap spinach with kale, add mushrooms, tomatoes, or any other veggies

Ingredients

  • 1 lb breakfast sausage

    1 cup cheddar, shredded
    salt and pepper to taste

Notes

  • Use cheddar, pepper jack, mozzarella, or Colby Jack cheese.
